Pizzelle is an Italian waffle cookie that is especially popular around Easter and Christmas. They are fairly large, at around five inches, and are usually made one or two at a time. It is traditionally made with a pizzelle maker, similar to a waffle iron, held by hand over a stove burner. With the creation of electric irons, they are becoming a popular snack for people who lack the time to prepare them in the old fashioned way. The irons leave a snowflake pattern on the cookies.

If you are going to make these cookies by hand, you'll need flour, sugar, eggs, and butter, margarine, or vegetable oil. You'll also need flavoring. Common flavorings include anise, vanilla, lemon zest, chocolate, cinnamon, and orange. If you don't have the time or inclination to cook but still want fresh cookies, you can also buy a pizzelle mix. In some grocery stores, you can buy premade pizzelles.

There are many comparable cookies in various regions. Krumkakes from Norway are quite similar. The pizzelle is thought to be based on the crustulum, which is an ancient Roman cookie. Although pizzelle is the most common name, in the Lazio, Italy area they are called ferratelle and in Molise they might also be called cancelle.

Pizzelles can be eaten in a variety of ways. Sometimes they are had as flat cookies. They are often crunchy, but they can also be prepared in a way to make them chewy and soft. A wooden dowel can be used when they are fresh to roll the pastry into a cone shape. This pastry can then be filled with cannoli cream or another filling. A filling can also be spread on them while flat to make a sandwich cookie.

While they can be eaten year round, they are mostly known for special occasions. These include the Christmas season and Easter weekend. Italian weddings are also a common place where these are found. However, since technology makes it easier to cook fresh ones at home with little effort, they are gaining popularity as a treat that can be eaten at any time.

Though they may always be most prevalent in Italian households, they are gaining mainstream appeal. If local grocery stores don't carry them prepackaged, they can always be purchased over the internet. Pizzelle bakers have made it simply for anyone to make up a stack of cookies on a Sunday morning. I have heard about pizzelles -- the crisp, Italian, waffle-like cookie -- for years. My curiosity got the best of me and I decided to buy a grill this year. There are dozens of ads on the Internet and reading them made me even more curious.

Two types of makers are available, stove-top and electric. The stove-top is the maker of the past, a round, metal baker held over a fire or wood stove. I used to have a stove-top waffle maker. Though the heart-shaped waffles were delicious, making them was a chore, and I had to adjust the temperature constantly. This was not what I was looking for in a grill.

What is a pizzelle? According to the Magnia Bene Pasta website, it is a traditional Italian cookie. The name, which is similar to the word "pizza," means round and flat. Many other cultures, including the Chinese, also make flat cookies. "Early pizzelles often were embossed with the family crest or some hint of the village of origin," notes the website.

The Big city, Little Kitchen website describes the cookies as "crisp, lacy nibbles." Warm cookies may be dusted with powdered sugar, or set in muffin tins to make little baskets, or rolled into shapes. "Although it's annoying to buy and store an appliance that only does one job," the website comments, "there are so many ways to reinvent the pizzelle that I think it's worth it to invest in an iron."

Consider these points before you make a purchase.

1. Stove-top or electric? My glass stovetop has already cracked once and a stove-top maker could cause it to crack again. For this reason, I chose electric.

2. Number of cookies. Some grills make two cookies, others make three, and still others make four. Two cookies were fine with me. Even better, the electric makers have a non-stick coating.

3. Storage. Large makers take up more space, so I focused my search on small ones.

4. Reviews and blogs. The Internet has many reviews of makers and recipes. I read reviews about well-known brands only.

5. Extras. All of the makers I read about came with recipes. Some also had a measuring spoon and a wooden cone for rolling warm cookies. The rolled cookies are filled with whipped cream, ice cream, or pudding.

6. Price. Internet and store prices varied greatly. Surprisingly, the large department store in my town (part of a national chain) did not carry the grills. Local discount stores carried them, but they were only available from the Internet. I wanted to see the appiance before I bought it.

Which one did I choose? A Cuisinart. I bought it at a new kitchen store for off the list price. Now I am in cookie production and the house smells wonderful. The grill is stored upright and takes up hardly any room. These cookies taste good at holiday time and all year round. Are you thinking about buying a pizzelle grill? Go for it!

You also have a choice in the size of appliance you purchase and how many waffles it will make at one time. While some waffle makers only make one or two huge waffles, others will make as many as 5 or 6 small ones. This means that you can make the size you want based on your families appetite.

Some of these appliances make thicker waffles than do others. Thinner waffles are often called traditional whereas the thicker waffles are known as Belgian waffles.

Who Makes Them

There are a number of companies that make these appliances, Cuisinart, Black and Decker, and Kitchen Aid are just a few of the many manufacturers of this product. Each company offers it own unique designs and features and when shopping for a new waffle iron it pays to look at what each company has to offer and read the reviews of each product to determine which of these appliances are right for you and your family.

Where to Buy

These appliances can be found in any store that carries kitchen appliances. Some stores will carry more models and brand names than others. You can also find these appliances online often at discount prices. Where you buy your appliance from will be more a choice of who carries the brand you want at a price you can afford. Comparison shopping in this case can definitely save you money.

Ingredients:

Directions:

- Add the sugar and milk.
- Cook over low heat, stirring constantly, until sugar dissolved and mixture boils.

- 3 / 4 cu water

Directions:

- Combine sugar, corn syrup and water.
- Bring to a boil, stirring constantly.
- Reduce heat and simmer for staging the ball hard.
- Combine beaten eggWhites and gelatin - beat until the mixture forms stiff.
- Pour the hot syrup slowly, beating the egg whites until candy loses its gloss and shape.
- Flaps in coconut and nuts (optional).
- Pour into greased pan 9-inch square.
- Start with rows of chopped walnuts and coconut.

3 Chocolate Turtles

Ingredients:

For turtles

- 2 squares of chocolate
- 1 / 2 cup margarine
- 2 eggs
- 3 / 4 cup sugar
- 1 cup flour
- 1 tspVanilla

For the icing:

- 1 / 2 piece of chocolate
- 1 / 2 cup brown sugar
- 1 / 4 cup water
- 2 1 / 2 tablespoons butter
- Powdered sugar

Directions:

- Melt 2 squares chocolate and 1 / 2 cup of margarine.
- 2 eggs. Sugar. Fold chocolate mixture into egg mixture.
- Add 1 cup of flour and 1 teaspoon vanilla Fold.
- Drop by teaspoon on iron hot waffles (low).
- Cook 50 seconds.
- Cool and frost.
- Icing: chocolate kitchenbrown sugar, water, butter and 3 minutes.
- Remove from heat.
- Powdered sugar until thick.
- Put on turtles.
- Sprinkle with the nuts on the ground.

4 Coconut Bon Bons

Ingredients:

- 3 / 4 cup instant potatoes (boiled for 2 servings, but not aged)
- 4 cups flaked coconut
- 1-16 g packet of icing sugar
- 1 teaspoon almond extract

Directions:

- Instant Mix the potatoes, coconut, powdered sugar and almond extract,Mixing.
- The refrigerator blend for 1 or 2 hours.
- Dissolve a 12 oz bag semi-sweet chocolate chips and 1 / 3 was a bar of paraffin in a double boiler.
- A mixture of coconut into small balls and dip in melted chocolate.
- Lay on waxed paper to cool.
